Mul Naengmyun -- success!

Once in awhile I get the kick to make certain dishes from scratch...my latest project was mul naengmyun (Korean cold beef noodle soup) because in the seven years I have lived in SD, I have yet to find a good place for mul naengmyun.  In Korea, you can order delicious mul naengmyun that is delivered to your house like pizza...they bring the noodles and accoutrements in a bowl and the broth in a pitcher and then pour the broth in when it's delivered to your door.

I googled a number of different recipes and the end result was pretty tasty!

Making the homemade beef broth - brisket, green onion, garlic, ginger, and fresh ground black pepper.


End result -- noodles with slices of brisket, half a boiled egg, cucumbers, Korean pear, and daikon kimchi.  Delicious on a hot summer night!

Weeks 5, 6 and 7

Oops I have been terrible at keeping current with my training posts.  My shin splints came back (boo) but I found a much better sports chiropractor (yay) so I've been doing the elliptical machine for my mid-week workouts along with yoga, and running outdoors only on the weekend long runs.  The last three weekends I have done 7 miles, 8 miles, and then 10 miles today -- feeling great! (albeit with some shin pain, though now only in my right leg.)
